KOVAL Distillery, one of the largest fully independent craft distilleries in the US, is dedicated to creating bright, grain-forward spirits that delight in both taste and design.
KOVAL has made a name for itself as a creative force in the distilling world, in part through its unique grain mash bills, but also due to its "heart cut" approach to distilling, which allows for the best expression of each spirit. The family-owned distillery in Chicago crafts a full line of organic, kosher, and locally-sourced whiskeys, gins, and specialty spirits, and is frequently awarded internationally for its bright flavors and eye for design.

Founded by husband-and-wife team Robert and Sonat Birnecker, KOVAL began as the first distillery in Chicago since the mid-1800s. Their goal was to marry centuries of tradition from Robert's Austrian distilling heritage with state-of-the-art modern technologies - all with the aim of bringing heightened levels of consistency and creativity to the world of spirits.
KOVAL is known around the world for its bright, approachable flavors and unprecedented creativity. While KOVAL’s whiskeys are all single cask, the contents of each cask are made with scientifically established consistency, which allows for the flavors of the thoughtfully-sourced grains - such as oat, rye and millet - to shine. The KOVAL gin line is also immediately recognizable for its innovative beauty. By both macerating and distilling each gin with a variety of woodland spices, abundant citrus-floral notes are imparted on each expression.

THE KOVAL PROCESS
KOVAL is founded on a grain-to-bottle mentality, controlling every step of the spirit-making process - from milling the grains on-site to distilling, barreling, and finally bottling.
KOVAL believes that the best spirits must come from the best ingredients. The grains are sourced whenever possible from local, organic farms, and each expression is certified organic and kosher to ensure the highest level of quality and transparency.
Spirits are distilled with a custom-built potstill handcrafted in Germany by Kothe Destillationstechnik. Kothe specially engineers each still with solid quality and energy-saving components that meet the particular needs of each distiller.
KOVAL's potstill, specifically designed for the production of whiskey and brandy, has an elongated whiskey helmet, a special distillation column and a unique bubblecap construction that provides greater surface area for the spirits to develop aroma and flavor. The smooth, unhammered copper potstill - combined with the dedication and savoir faire of KOVAL's distillers - guarantees high quality and aromatic distillates.
